Traditionally on the fall color cruise on Center Hill, we have a fish fry for our houseboat community. This year we have decided to smoke a whole hog. We are expecting 60-70 people. It has been lots of years since I had any part of a whole hog cooking. I would welcome any suggestions, pig size, temps, cooking times, warnings, etc.. We will be cooking on a portable rotisserie over charcoal and hickory. We need to be ready to eat about 6 on Saturday night. Thanks!!

Well, we priced a 100/120# dressed pig. $3.49 per pound. If this were a big gathering close to home we might still give it a shot, but for a one time thing, miles from the dock, I don't think so. Looks like a low country boil is in store for this year.
