Sprouts Market just had a sale on corn at 6 for $1, and that is too cheap to not load up. Never frozen corn. And this corn is very sweet and tender fresh. Any recs on best easy way to freeze some sweet yellow corn for next Winter eating??

Look it up on the internet......Or

1.  Shuck, get rid of silks, wash

2.  Cut off cobb with a corn cutter as pictured below, juicier the better

3.  Place in a metal roasting pan that can go on your grill

     Cook a pan 1/2 to 3/4 full until it is bubbling good

     Stir a lot, as it will stick.  Gets hot on edges, keep scraping off what is cooking on edges, and stir to center.

     Some will stick on your stirring device.  Scrape off with a fork and eat.  It is good.  Hot, but good

4.  When bubbling really good, pour into a pan that can go into your frig for cooling.

5.  When cool to tough (yes, stick your finger in and check it) put in zip lock bags.

That is my Mother's process.  Growing up it was quite a day around the farm when it was time to "do corn".  It was by the truck loads.

Last summer, I raised a decent amount at my Mom's house, and she (at 91) helped me with the above process.  She mainly stirred the pot on the grill.  My Dad used to have that part, and the grandkids loved to hang around for the taste.  Last summer was the last time my Mom will be able to help me.  I have pictures if i can find them.

You don't mention freezing cob corn. I would like to have some good cob corn available for a Low Country Boil and bonfire next winter??

Corn on cob = pick it fresh, microwave in shucks,  remove from shucks, butter, eat, enjoy

It is so good that way that all other methods pale in comparison.

I will not freeze on cob

Freeze cut by method above.  Cook in frying pan with butter and a little milk as low country side dish.

Your guests will appreciate!!
