INGREDIENTS: 2 tablespoons butter ½ medium onion, chopped 2 cloves garlic, minced 3 chipotle chili peppers (canned), diced ¼ cup cider vinegar ¼ cup brown sugar 2 tablespoons molasses 1 cup ketchup 1 teaspoon salt 1 teaspoon black pepper ¾ cup Dr. Pepper
STEPS: Melt butter in saucepan over medium heat. When foam subsides, add the onion. Sauté for 2-3 minutes until opaque. Turn heat to medium-low, add the garlic and continue to sauté another minute or two. Add the chipotle and cook for a couple of minutes. When the above is wilted and heated through, add the vinegar, brown sugar, molasses and ketchup. Mix well. Add the salt, pepper and Dr. Pepper. Stir well and bring to a simmer. On low heat (barely a simmer), continue to cook the sauce for 20-25 minutes, allowing it to thicken. When done, strain it — and enjoy!

Sounds really good. How do you use it?? Which meats or sides?? With the chipotle, how hot is it, mild tingle-on-the-tongue or a tearjerker??

good with all meats ... but I generally cook just pork. Not hot at all ... the chipolte only add flavor and a slight smokey taste.

Sounds really good. Have you tried blending it with a stick blender rather than straining it to keep all the onion, garlic and chipolte in it?
