I have tried pellets in my MES smoker. I have an Amazin Tube at the lake and have used them in my cold smoker attachment at home. So far I am not impressed. It is very difficult to keep them burning in the Amazin tube and the cold smoker didn't feed them well at all. I tried microwaving them to remove any moisture, but they still just didn't peform like chips. I am also skeptical of pellets that are not 100% of the wood I want. I have always used chips and oak is not one of them, yet most pellets are "flavored" and contain oak filler. It concerns me that the bitter taste of the oak will come through. You can find pellets made of 100% cherry, or mesquite or hickory, but they are pricy. Until I either get more comfortable with pellets, or until something new comes out, I'm sticking with chips.
