TC, when I do a brisket, there are always a lot of leftovers, so we go Cuban! A well smoked brisket is very similar to a beef cut used by Cuban butchers down South (Florida), similar to a Flank or Skirt Steak. Normally grilled hot, but similar in flavor/texture to a brisket. AKA Tacos/Fajitas in Mex restaurants.
Seasoning completely different from Mex. Spices in "Old Clothes" or "Fried Cow" do not scorch your mouth. Cuban is not HOT! These people know how to cook a cheap piece of meat. Recipes galore from my Mother-In-Law.
