Here's how I make mine. Sorry, I'm not great on exact measurements because I rarely use them.

Fire roast some (10+) Roma tomato's  (or buy them canned if out of season). Put them in the food processor and puree.  Saute a finely chopped vidalia  onion in butter with 2-3 cloves of crushed garlic. Add the tomato puree and 2-3 tablespoons of chili powder to the onions and garlic. Simmer.

Make some pulled pork or pulled chicken (2 or 3 cups of leftovers from a beer can chicken or a boston butt work great).  Mix meat with some of the sauce (just enough to slightly wet the meat) and also mix in  some cheese. I like sharp cheddar, but use what you like and an amount you like.

Heat a skillet with high temp vegie oil in the bottom. Dip corn tortillas in the sauce and then fry in the hot oil for a few seconds on each side. Remove and roll meat and cheese mix in tortilla. Place in oiled glass baking dish. Poor remaining sauce over the top and  sprinkle on  more cheese.. Bake at 350 until cheese is bubbly and remove. Sprinkle with fresh cilantro and fresh (diced) jalapenos and dig in. Sour cream, avadaco, fresh pico de gallo, and finely chopped lettuce go well with the finished product.

BTW, I vary the above depending on what I'm in the mood for and who will be eating it. Sometimes I mix fire roasted peppers in with the sauce and add other spices to taste. For a slightly less acidic flavor, add just a bit of sugar. The amount of sauce is also a variable and sometimes I make them much "wetter". You can double dip in sauce before and after frying the tortillas and add more or less to the meat and on top.
