So I am thinking of replacing the countertops in our kitchen and bathrooms (along with sinks, faucets, mirrors and lights) and am looking for recommendations.  Already aware of Lakeside, Morris Custom and Hyde's and wonder if anyone has experience with them or has other recommendations.

I concur with the recommendation of DeBeer Granite.  They did our kitchen counters and 5 baths and did excellent work.  They are located on the north side of Peachtree City, GA but do a lot of work here at the lake.
