I also have had a "leftover" pork sandwich experience, with that peculiar flavor that says "yesterdays lunch". Ruined our favorite BBQ place on the way to/from the beach at I65 and CR10 in Greenville. Not to mention the big price increase.
Question: you smoke a big butt to perfection, pull it, serve it, eat it, and, have a huge pile left. What now??
Anybody know of a method for preserving it for later? There are grocery store brands of BBQ pork that are sort of "OK" that don't have that strange flavor. Not like fresh, but taste OK.

in super airtight and freezer burn proof bags. Depending how much you have, you may want to break it up in smaller meal sized portions.

I have had more luck freezing ribs than pulled pork. But even if the pulled pork does not pass the "stand alone" test, you can bet it will be awesome with something else, like in a sho nuff style baked potato, or as an ingredient in another dish like brunswick stew. If you're like me, once I put in the effort I hate to waste a single morsel.

Thanks, John C. I think you have the answer. I guess we cannot expect to get the same Bang from leftover Butt as the from the fresh variety. Soups, stews and casseroles sounds like the alternative to a "sammich".

I do my best to not pull any more than I need for a single meal at a time. Whole butts are much better reheated than pulled meat. Food Saver bags and vacuum packing works well. You can reheat in the bag in boiling water and not risk drying it out in the oven. Use the microwave only if you like smoke flavored erasers!

Try inviting enough people to finish it off, right when you pull it off the grill.
Heres my secret recipe for Butt rub.
Astor seasoning salt & black pepper 50% - 50% Rub it down real good trying to make it stick everywhere possible, then cut a deep slit into the butt and pack the remaining mixture into the slit. Cook the outside of the butt on high, burning the rub onto the Butt, remove from direct fire let finish cooking 4 - 8 hrs until the middle of the butt gets to safe temp, ( I always have to consult the guide on my electric temp probe for this. MMMMMmmmmMMMM Enjoy..................
