Yesterday I fired up the ole smoker and smoked a 10# Boston Butt and three slabs of St Louis style ribs. I used apple wood for the smoke and cooked the butt for 9 hours and the ribs for 4 hours both at 250*. The family gave me an A+ on both the ribs and the butt. I got the butt from Foodland-Dadeville for $1.48/# and the ribs from M&T Meat Market in Hawkinsville, GA. The butt was so good that I went back to Foodland and bought a couple more butts for the freezer. I hope evryone has a Great and Safe 4th of July holiday. GOD BLESS AMREICA and the men and women that serve in our military.

Or the Judge is the Cooker
Sounds like a winner Maddog. I know you and your family enjoyed. I tried ribs for the first time ever on Green Egg. Did pretty good with a version of the 3-2-1. Did you just smoke indirect head for 4 or did you foil along the way?
I have been getting Butts from the Maplesville Supermarket near my mother's home. They have been better than the ol double pack from Sams. Glad to hear about the Dadeville version.
What veggies did you have with the Q. We have maters, green beans, okra, squash and fresh corn. Was good!!!

LNG....I have an offset firebox on my smoker. I usually smoke the meat for 2 to 3 hours and then wrap in foil for the duration. We had green beans, maters, cukes (all from my garden), corn-on-the-cob and slaw along with cornbread muffins. We're going to have BBQ sandwichs for a late lunch today with the leftover butt. Did I tell you how much I love BBQ?
