I'm heading to Alaska for a 20 day fishing trip and I need recipies for salmon and halibt. I love Halibut, but in the past I have not eaten much salmon. I think the ones preparing the salmon I had in the past over cooked it and it was dry and lacked a good salmon taste. I've recently tried a couple of recipies for salmon for a neighbor that does not eat red meat and I got the recipies from Facebook and now I love salmon. If you have a good recipe for either salmon or halibut, please post so I can try before I take off to Alaska. Thank you in advance for your help in this matter. P.S. I have a rather large smoker and will be smokin' both halibut and salmon when I ge back from the trip.

Smoker might be good. However for Right Now, fire up a charcoal grill. Dress salmon fillets with a thin coat of olive oil and sprinkle with salt and pepper. Crisp both sides over hot direct coals until cooked to your choice. I do not like raw fish of any kind. But, I do like a chunk of salmon or fresh tuna toasted outside and tender/flaky/not watery inside.

My intro to fresh salmon was in San Francisco in ancient times. First time was at the Warf and I had steamed salmon. Just amazing to me.

It was a generous fillet wrapped in cheesecloth and steamed in a skillet of water. Plated with lemon and butter. The salmon alone has a mild fish flavor, easily flakes in sections, with  just a slight undercooked texture. Not raw or watery, but not dry.

grilled or steamed it is just a marvelous fish.

We mostly prepare ours on a wood plank on the grill. Usually with minimum seasonings, sometimes after marinating in a brown sugar, soy sauce, butter and lemon juice mixture that we first had on a island in Alaska.
