Mack, We made it for a while. We used a starter that we fed mashed potato flakes. I still have starter in the fridge, but with only two of us at home now the four loaves it makes are overkill. I guess I need to get the starter out and feed it and hope its still alive. There is not much better than fresh warm bread.

 Wifey just gave me a Kitchen Aid Stand Mixer, just for fun. I have gone thru maybe 8 pounds of flour so far trying to find the magic trick between flour, water, yeast, air, soil, day of the week, humidity, air pressure, light level...

I can make the heaviest loaf of Italian Bread ever made. Smells and tastes great, but light and airy?? Nah. Any advice as to how to create "Light and Airy" would be appreciated...

Well, I fed the starter and it's not looking good. Maybe a little life left so I will wait another day or two and try again. Maybe it will revive. When I get home, if the internet is working, I will send you a recipe for Italian bread and pizza dough. Both are easy and turn out great, depending on the factors you mentioned! Congrats on the stand mixer. I finally bought one and still don't have it out of the box yet. :-(

It's about time to get my sourdough back in business.....need to get a new starter going soon, my old batch has flopped because of being gone too much and wasn't doing the job for top shelf bread and rolls. I'll be a full time lake dude starting in July, so lookng forward to cranking some carbs for tomato swapping!
