I came across this recipe the other day while looking for something else.  I made it tonight and it got a big thumbs up. 

2 16oz containers of sour cream
2 cups of shredded cheddar
2 3oz packages of real bacon bits
2 packages of Ranch Dip mix
1 large bag of frozen hash brown potatoes

Mix everything, but the potatoes together.  Then add the potatoes and mix well.  Spread into a 9x13 pan.  Bake at 400 for 45-50 minutes. 

I halfed the recipe, added some chopped green onions, used "Real Potatoes" non-frozen hash browns and baked it for 40 minutes.  I also put extra shredded cheddar on top.
It was really good.  Made more than enough for 2 people with leftovers. The recipe says it can be frozen.

Hound....I'm cooking for the family today and I'm going to do the Crack Potatoes. We're going to have 8 adults and 3 kids. I'll let you know how the CP turns out.

I make something similar but use buttermilk, sour cream, minced onions, garlic, pepper, papricka and flour. Mix in with  finely diced potatoes and cheddar cheese. Bake, then top with fresh green onion and crumbled crispy bacon.

Definitely not diet food.  But, I did use light sour cream... LOL.

Put the potatoes with it and it could be called a Butt-Crack Plate?
