Quick, easy and a fan favorite.
SANTA FE SOUP RECIPE 1 1/2 Pounds Beef 1/2 Medium Onion finely chopped 1 - 1 oz Envelope of Original Ranch Dressing Mix (Hidden Valley) 1 - Envelope of Taco Seasoning (Taco Bell) 1 - 11 oz can of Shoe-peg Corn (We use 2 as we love corn) 1 Can - Black Beans 1 Can - Pinto Beans 1 Can - Kidney Beans 1 - 16 oz Can of Diced Tomatoes 1 - 10oz Can of Rotel Tomatoes with Green Chilies 1 1/2 Cup of Water
Add Jalapenos or Cayenne Pepper to spice, if you like Also can substitute Turkey or Boiled Chicken Breast for Beef - Cook Beef and Onions together - Combine all remaining ingredients into large pot DO NOT DRAIN any of the cans and then add beef / onion to pot - Simmer 2 to 3 hours after bringing to a boil - If mixture is too thick add a little more water - Top with cheddar cheese and sour cream, if you like

Here's one a little different that we like:
LENTIL SAUSAGE SOUP
2 - TBS. Olive Oil 1 - Large Onion, chopped 2 - Ribs Celery, chopped 2 - Med. Carrots Sliced ¼ in & halved 4 - Garlic Cloves, chopped 6 - Cups Chicken Stock (not broth) 2 - Cups water ½ Lb. Dried Green Lentils 1 - 14 oz. can Crushed Tomatoes ½ Lb. Smoked Sausage & 1 Andouille Sausage cut in half lengthwise sliced 1/3 in thick 1 - tsp. Cumin 1 - tsp. Oregano 1 - tsp. Thyme 1 - Cup Dried Elbow Macaroni or Small Pasta (may substitute 1 can Northern Beans, drained & rinsed)
Salt & Pepper Grated Parmesan for serving
1. In a 4 QT chef’s pot or stock pot over medium heat add the oil, heat and add the onion, celery and carrots and sauté 15 min or until they start to clear, Add garlic and some salt & pepper and sauté another 5 minutes. 2. Add the chicken stock, water & lentils, cover & bring to a boil. Reduce heat and simmer for 20 minutes. 3. Add the tomatoes, sausages and spices, salt & pepper to taste and simmer another 20 minutes. 4. Add dried pasta or beans and simmer 10 minutes
Serve with grated Parmesan on top.
