He is a serious outdoor cooker. Fryers, smokers, flame broilers. He used to have a food truck and restaraunt in bham.  Anyway, he got an old convection oven, commercial, and converted it to a smoker. It will hold 8 butts easily and can have them perfectly smoked in 3 hours. He sold his place on Lay and is building up here in sandy. Man I am going to be huge by this time next year!!

I always wondered if forced air in a smoker would help with time. Thanks for sharing!
