We are headed to Texas for the holiday and the Texans in the family asked that I bring a brisket. So much for the briskets in Texas being the best! Anyway, I put a 16 pounder on at 9:00PM Tuesday. At 6 AM Wednesday I wrapped it in foil. It was at 160ish. I left my wife instructions to pull it off at 205, let it rest and then refrigerate. At 11AM she called and said the temp had gotten to 199, but had dropped back to 180. After a little discussion we determined that the smoker had turned itself off around 10 since that was when the timer I set got to 0. She then put the wrapped brisket in the oven at 300 until it got back up to 205. When I took it out to slice and pack last night it was falling apart tender, almost ot the point I couldn't slice it. No question for the forum. I just wanted to say happy 4th. Thank you to all our Vets who have made and kept this country great. 

Be safe on the lake. There are idiots everywhere! As they always said on Hill Street Blues "Lets be careful out there!".

Thanks for the post. Not many good places for brisket around here. You be careful on the highway it will probably be more dangerous than the lake.

Just got back from Texas visiting in-laws. While we were there Kroger had briskets on sale for $1.67 lb. We packed 8 in our cooler and other boxes and hauled them back to Tennessee where the price is $3.48 lb. When you can save over half it's time to stock up! The smoke will be rolling for a few days here!

I was in Renfroe's/Foodland in Dadeville, AL yesterday and brisket was $8.55 per pound. Has anyone in the Dadeville area purchased a brisket lately and what did you pay? I love brisket, but $8.55 is above my retirement pay grade!!!!!!
