and after further research........  I think I'll stick with my old fashoned meat thermometer that can be calibrated and I know will give very reliable results.  At some point I may buy a couple of the non-remote alarm models (for 10-15 dollars)  and set them both for 5 degrees under desired temp, but I don't know that I'm ready to rely on these  (or the remote) units. Even then, I'll probably actively check on things and go by instinct....I like to stay actively involved in the cooking process anyway; it's a good excuse to drink beer.
