Very complicated question that has no simple answer because you have to separate European anti-Semitism from Muslim anti-Semitism. I've read several books that covered this issue and had some theories. Simplest one of course for the Europeand is that Jews killed Christ, which of course makes no sense theologically and even less when you consider that he was also a Jew. Other theories I've read relate to the insular nature of Jews and their proclivity toward financial success. Basically envy. I've also read that in Nazi Germany Jews were an easy target to blame for the lousy results of WWI and the punitive peace agreement.
As for the Muslims I figured that out when I went on pilgrimage to Israel. OMG, what a messed up place. In essence the Temple Mount is allegedly co-located with where Mohammed supposedly ascended into heaven.....yah I know, fat chance that was where he ended up. So basically Jews and Muslims have been fighting over the Holy of Holies (Islam's name for it) since the 7th century. And of course we all know that Muslims consider anyone not Muslim to be an infidel. But they harbor a special hatred for Jews because of the back and forth on the Temple Mount, which they currently control. And the feeling is mutual I can assure you. We were supposed to go there but were not permitted because there was a rumor that Orthodox Jews were planning to invade it in protest. On a side note, I found the Orthodox Jews to be uniformly unpleasant and many were downright hostile. Not so much with the Palestinians. And sadly the Christians in Israel are stuck between the two and disliked by both. It is such an incredible mess.
