In a few weeks I will be trying this on the grill for the first time. Should work fine.
A long time ago, for some company we had visiting the house we created something that we now repeat often: Breakfast Quesadilla
Pre-cook/saute mushrooms, onions, peppers (whatever you like), can be done day before and refrigerated.
Cook up bacon and/or your favorite sausage. Cut or crumble to small pieces. Scramble up lots of eggs (3 eggs per person works for us). Shred favorite cheeses or use blended Mexican store bought cheese (works well because it is thin consistency and easy to spread).
On a griddle or griddle tray on the grill, lay one flour tortilla and generously spread cheese on it.
Layer on scrambled eggs, then vegatables and finally some of the bacon/sausage. Add another layer of cheese (acts as glue), then top with 2nd tortilla and press down.
With an electric griddle we have I heat at 275 to let it go slow enough to get the cheese to melt. Flip after a few minutes and remove after 2nd side has firmed up.
Remove to cutting board, slice into 4 pieces - build a tray of quesadillas , some with meats, some without, some with vegetables, some without to accommodate all tastes likes and dislikes.
Serve with favorite hashbrown/potatoe dish.
Easy finger food with all ingredients nicely tucked inside and held together with the cheese.
Some guests have asked for salsa to be on the table too.
