From my post in March, I followed your comments and used a crock pot. Wow, what a difference.
A little over-cooked at LO for 8 hours, but very tender. Next time 6 hours.
Not seasoned enough (no seasoning packet enclosed so I added onion cubes and garlic powder). Next time I'll add lots of yellow onions, maybe bay leaf, maybe paprika, and maybe a generous shot of Marsala wine to beef stock.
Maybe steam the cabbage in the brisket juices.
But the crock pot is a Lock. Thanks for your input.
